Notes: A excellent Pedro Ximenez Sherry that is deeply coloured with dense aromas of raisins, dates & honey. The palate is unctuous & complex with a long, candied fruit finish. Great on its own but works very well with blue cheeses, vanilla ice-cream (poured on top!), dark chocolate, dried fruits, Christmas Pudding…

The Pedro Ximenez grapes are hand harvested from the Montilla-Moriles region which produces the finest PX for sherry. The grapes are dried under the hot Spanish sun, concentrating the sweetness. Vinification is stopped early by fortification resulting in a sweet wine, & is then aged in the solera for an average of 5 years. The wine has between 350 & 400g of residual sugar per litre.

 

Producer Notes: Juan Sánchez de la Torre founded Sanchez Romate in 1781 in Jerez to produce fine wines. More than two centuries later Sánchez Romate is one of the oldest bodegas in Spain & one of the few that remains in family hands. This has allowed the company to maintain its independence & continue making wines in the same time-honoured tradition. Over the years their quality has been rewarded with appointments to the House of Lords & the Vatican.

To ensure quality from vineyard to bottle Sánchez Romate not only owns its own vineyards (in the best albariza soil areas of Jerez) but has also invested in some of the most modern facilities in the region, all of which are still housed in the bodega buildings located in central Jerez. These traditional cellars with their high ceilings keep temperatures stable & allow the natural yeasts to circulate while the sand floors keep the humidity at the correct levels.
